PURPOSE: A producing method of cultivated mountain ginseng having the increased content of functional components is provided to increase the content of specific ginsenoside, acidic polysaccharide, and polyphenol inside the ginseng by irradiating far infrared rays. CONSTITUTION: A producing method of cultivated mountain ginseng having the increased content of functional components comprises the following steps: washing the cultivated mountain ginseng, and removing the moisture; removing lateral roots from the cultivated mountain ginseng, and cutting the main root; and irradiating far infrared rays to the cut main root at 90-110 deg C for increasing the content of specific ginsenoside, acidic polysaccharide, and polyphenol. The wavelength of the far infrared rays is 2-14 micrometers.본 발명은 산양산삼을 세척하여 물기를 제거하고, 지근을 제거하며 주근을 절단한 후, 원적외선을 조사하여 건조시켜 특정 진세노사이드, 산성다당체 및 폴리페놀 등 기능성 물질 함량이 증가된 산양산삼을 제조하는 방법에 관한 것으로, 산양산삼의 건조효율을 높이고 다양한 기능성 물질들의 함량이 증가된 새로운 형태의 기능성 산양산삼차와 같은 식품을 제공할 수 있다.
