The present invention provides a non fermented beer-like foaming beverage having beer-like bitterness when bitter substances other than hops are used. The present inventions are a non fermented beer-like foaming beverage containing at least one bitter substance selected from the group consisting of quassin, absinthin, naringin, gentioligosaccharide, peptide, mineral, and caramel and at least one stimulating substance selected from the group consisting of triethyl citrate and tributyl citrate, the above non fermented beer-like foaming beverage produced by using no hop, and either of the above non fermented beer-like foaming beverages produced by using no malt.本發明提供一種於使用啤酒花以外之苦味物質之情形時具有類似啤酒之苦味的非醱酵之類啤酒發泡性飲料。本發明係含有選自由苦木素、苦艾素、柚苷、低聚龍膽糖、肽、礦物質及焦糖所組成之群中之1種以上之苦味物質、與選自由檸檬酸三乙酯及檸檬酸三丁酯所組成之群中之1種以上之刺激物質的非醱酵之類啤酒發泡性飲料，不使用啤酒花作為原料所製造之上述非醱酵之類啤酒發泡性飲料，以及不使用麥芽作為原料所製造之上述任一種非醱酵之類啤酒發泡性飲料。
