摘要：: (57)< Abstract > This invention, the root or tuber starch which also contains the amylopectin of 95wt% little in the dry substance base of the starch or those derivatives, consists of, the etherification, esterification or amidation with the substituent which possesses the alkyl chain of carbon atom 4 - 24, it regards the production manner of the hydrophobic starch. As for this invention it regards also the hydrophobic starch which is obtained by the manner.本発明は、デンプンの乾燥物質ベースで少くとも95wt%のアミロペクチンを含有した根または塊茎デンプンまたはその誘導体の、4~24の炭素原子のアルキル鎖を有する置換基での、エーテル化、エステル化またはアミド化からなる、疎水性デンプンの製造方法に関する。本発明はその方法により得られる疎水性デンプンにも関する。
