A microcapsule that comprises an agglomeration of a primary microcapsule and a loading substance, with the agglomeration encapsulated by an outer shell. The primary and outer shell comprise a complex coacervate of (i) soy protein or (ii) pea protein and one of: agar, gellan gum, gum Arabic, caseinate, low methoxyl pectin, pectin, alginate, carrageenan, carboxylmethylcellulose casein, cereal prolamine, xanthan gum, starch, oligofructans, konnyaku, canola protein, dilutan gum, locus bean gum or welan gum. The loading substance can be an omega-3 fatty acid or arachidonic acid.
