Present invention provides a process to extract oil from Momordica cochinchinensis aril. Before the process, the aril can be added water and enzymes or added nothing. The process can be carried out with continuous centrifuge, such as horizontal centrifuge, butterfly centrifuge or tube centrifuge. Rotating speed is 2,000,5,000,10,000 and 20,000 RPM. Add water to aril ratio of 5:1, 7:1,10:1 or 20:1, water temperature is 25℃,50℃,80℃ or 98℃. Before the centrifugation process, the aril can be added other plant oil, the purpose is to reduce the concentration of pectin . Centrifugation times are 1,2 or 3, 100% pure Momordica cochinchinensis oil can be isolated. If the aril add plant oil, the product is mixed oil. Water-containing aril can be processed and used as by-products.一種由木鱉果假種皮分離果油新製程,假種皮可加水及酵素或都不加,使用連續式離心機,包括臥式離心機,蝶式離心機以及管式離心機,轉速為2,000,5,000,10,000及20,000轉/分,新製程中若加水(水與假種皮比例為5:1,7:1,10:1及20:1,水溫為25℃,50℃,80℃,98℃),另也可加入其他植物油,調降果膠濃度後再離心,離心次數為1,2,3次,分離出油可得純度100%木鱉果油,若添加植物油者則得到混合油,含水假種皮可以行副產品加工利用。
