The invention relates to the medical industry, the food industry, biotechnology, cosmetology and the feed industry, and more particularly to the production of encapsulated products during the comprehensive processing of oleaginous fruits having succulent oily flesh, such as olives and avocados. The essence of the invention is that a pulp, or an oil, or a pomace is obtained from the succulent oily flesh of the fruit and is then encapsulated as core content with a shell forming agent into a receiving medium to produce capsules having a diameter of 2-25 mm and a thermotropic polysaccharide shell. The technical result of the invention is the comprehensive processing of oleaginous fruits having succulent oily flesh, such as olives and avocados.
