PROBLEM TO BE SOLVED: To provide an apparatus for cutting off roots of bean sprout, which has a simple apparatus constitution, can efficiently cut and remove root parts of bean sprout and has high treatment ability.SOLUTION: An apparatus for cutting off roots of bean sprout includes a cutting stage 4 in which slit plates 3 having a plurality of cutting slits 2 are arranged in parallel, a plurality of plate-like cutters 5 arranged on the cutting stage 4, a water sprinkling means 6 for sprinkling water on the cutting stage 4, a cutter drive means 7 for moving the plate-like cutters 5 along the upper surface of the cutting stage 4, and a stage drive means 8 that drives the cutting stage 4 to travel in one direction A along the arrangement direction AB of the slit plates 3 and to convey bean sprout m. The cutting slits 2 are formed in a state inclined to the traveling direction (A) of the cutting stage 4 and mutually in parallel with a width direction C perpendicular to the traveling direction (A). The plate-like cutters 5 are arranged mutually in parallel in the width direction C.
