The present invention relates to a manufacturing method for a broth material, and the broth material. The manufacturing method of a broth material comprises the following steps: firstly heating at least one raw material selected from the group consisting of meat, seafood, and spices in water at 90 to 100°C for 3 to 35 minutes; secondarily heating the firstly heated raw material in water at 80 to 140°C for 20 to 190 minutes; and sterilizing the broth extracted in the second heating step by heating the same at a temperature of 90 to 130°C for 10 to 60 minutes.
