PROBLEM TO BE SOLVED: To provide a method for producing an ascorbic acid derivative-containing emulsification composition in which yellowish discoloration with time resulting from the ascorbic acid derivative is suppressed, and which is stable without adding a surfactant.SOLUTION: The invention provides a method for producing an emulsification composition, comprising a process of subjecting a mixture containing hydrophobically modified alkyl cellulose represented by following formula (1), lipid-soluble ascorbic acid derivatives, and water to high pressure emulsification.
