PROBLEM TO BE SOLVED: To provide a method for producing dried pickled plum confectionery, which is very palatable, by making effective use of salted plum and ginger, which are used mainly in pickles or the like, so as to gain confectionery having an image of health.SOLUTION: Salted plum of raw material is desalted by means of a conventional method, and a material which contains gingerol and shogaol, a sweetener, an acidulent and a seasoning are added to a liquid having a salt concentration and acidity under fixed conditions, and the plum is made to exist together with the liquid to conduct pickling, and then drying is made.
