PROBLEM TO BE SOLVED: To provide a method of processing vegetables, which can reduce potassium contained in the vegetables and the like while maintaining the flavor and texture of the vegetables and the like.SOLUTION: A method of processing vegetables comprises a piercing step S20 of piercing a needle 41 into a vegetable 3 to form a needle hole 5, and an immersing step S40 of immersing the vegetable 3, which has the needle hole 5 formed by the piercing step S20, in water 30. As the result, potassium contained in the vegetable 3 can be eluted into the water 30 to reduce the potassium content of the vegetable 3. The potassium is easily eluted from the vegetable 3 by forming the needle hole 5 in the vegetable 3, and the potassium contained in the vegetable 3 can be efficiently removed.
