PROBLEM TO BE SOLVED: To provide functional processed foods of rice, bread, noodle, and confectionery made from raw material rice normally unsuitable for edible use such as loose granular rice of superhard rice, glutinous rice, milky white rice, and the like; and to develop a composite use of rice and fermented soybean paste.SOLUTION: The manufacturing method of functional rice powder includes immersing loose granular rice of superhard rice, glutinous rice, milky white rice, and the like in a water solution of fermented soybean paste, and pulverizing the softened rice. The functional rice powder may be included in bread, noodle, and confectionery. Alternatively, loose granular rice or superhard rice is immersed in a water solution of fermented soybean paste and the softened rice is cooked to manufacture a functional cooked rice.
