PROBLEM TO BE SOLVED: To provide an ephippium hydrolysate that has much cysteine content, and contains peptide of a wide range of molecular weight from low molecular weight to high molecular weight.SOLUTION: There is provided an ephippium hydrolysate in which cysteine content is 5.0% or more and 15.0% or less, and in molecular weight distribution, the ratio of molecular weight less than 3,000 is 80% or more and 95% or less, the ratio of molecular weight 3,000 or more and less than 10,000 is 1% or more and 15% or less, and the ratio of molecular weight 10,000 or more is 0% or more and 5% or less. In the ephippium hydrolysate, the ratio of cysteine with respect to alanine 1 part may be 1.0 part or more and 10.0 parts or less.
