PROBLEM TO BE SOLVED: To provide a method of producing polyphenol compositions having excellent solubility to water by using materials which are inexpensive and have less influence on flavor the compositions without any specific apparatus.SOLUTION: A method of producing polyphenol compositions comprises the steps of: dissolving (A) poorly water-soluble polyphenols and (B) one or more materials selected from catechins, chlorogenic acids and methylation products of water-soluble polyphenols in an ethanol aqueous solution having an ethanol concentration of 30 pts.vol. to 90 pts.vol. at 0°C to 90°C to obtain a dissolving liquid, and drying the obtained dissolving liquid.【課題】特殊な装置を必要とせず、安価で、組成物の風味への影響が少ない素材を用いて、水への溶解性に優れるポリフェノール組成物を製造する方法の提供。【解決手段】（Ａ）難水溶性ポリフェノール類と（Ｂ）カテキン類、クロロゲン酸類及び難水溶性ポリフェノール類のメチル化物から選ばれる１種又は２種以上とを、０℃以上９０℃以下で、エタノール濃度が３０体積％以上９０体積％以下のエタノール水溶液に溶解して溶解液を得る工程、及び得られた溶解液を乾燥する工程を含むポリフェノール組成物の製造方法。【選択図】なし
