PROBLEM TO BE SOLVED: To provide a composition which can sustain and reinforce the tastes of foods, to provide a method for producing the composition, and to provide a food raw material containing the same.
SOLUTION: There is provided the composition as a seasoning ingredient, especially comprising a nucleic acid-based taste ingredient and one or more tetrapeptides represented by Leu-Glu-His-Ala, Ile-Lys-Gln-Asp, Ala-Gln-Pro-Thr, and Ala-Gln-Pro-Ala. The tetrapeptides can be used to reinforce the taste of a food and increase its body more than when the nucleic acid-based taste ingredient is used alone.
