Disclosed a process of producing pack pressure-cooked whole bangus (milkfish) comprise the steps of, preparing gutted and de-scaled whole bangus and soaking it into brine solution. Stuff the abdomen through the slit with herbs. Marinate the stuffed bangus by smearing with the mixture of vinegar, calamansi juice extract, minced garlic, ground black pepper, and salt. Wrap the marinated stuffed bangus with banana leaves. Pressure-cook the wrapped bangus for a period of time and packing the pressure-cooked whole bangus into a plastic sealed vacuum packed.
