CONSTITUTION: A producing method of pickled apple comprises the following steps: removing seeds from washed apples, and cutting; drying the cut apples using a drier; mixing 100parts of water by weight, 8~9parts of fish sauce by weight, 12~15parts of red pepper powder by weight, 10~20parts of Japanese apricot extract by weight, 0.5~1parts of garlic, 0.5~1parts of shallot by weight, 10~15parts of stock by weight, and 5~10parts of starch syrup by weight; adding 50~60parts of dried apples by weight to 100 parts of mixed seasonings by weight; and aging the mixture.본 발명은 물, 고춧가루, 액젓, 매실엑기스, 물엿 등으로 양념장을 만든 후 건조한 사과를 혼합하여 사과 장아찌를 제조하는 방법에 관한 것으로서, 사과의 특유의 향과 맛을 유지하면서도, 여러 가지 양념이 되어 있어 다양한 맛을 낼 수 있는 사과 장아찌에 관한 것이다.
