Method for processing stretched-curd cheeses, including the following sequence of steps, stretching the melted cheese to obtain stretched curd； forming said stretched curd to obtain portions of stretched curd with predefined shape and weight； packaging said portions of stretched curd to obtain packaged portions； and hardening said packaged portions in a bath with a controlled temperature to obtain already packaged stretched-curd cheeses.
