An apparatus for producing germ-free fresh juice is arranged so that an agent tank (12) which holds an agent for washing the raw material of the juice, a water tank (14) which holds water for rinsing the raw material, a rough-cutting device (18), and a fine-cutting device (16) are provided in that order, and water content adjustment devices (20, 22) for adjusting the water content are also provided at predetermined positions. These devices are airtightly connected to each other, and the raw material is moved therethrough. The water tank is provided with a wall member which seals off an upper space of the water tank for the atmosphere. The fine-cutting device is arranged so that fixed blades are positioned around at least the circumference thereof, and rotary blades are positioned within the fixed blades, so that the raw material can be cut between the blades. Since the juice-producing apparatus employs fine and rough-cutting devices, no compressed sediment is produced. The use of this juice-producing apparatus makes it possible to mass-produce germ-free fresh juice.
