PROBLEM TO BE SOLVED: To provide a konjac powder quickened in a water absorption speed while retaining excellent water retainability of having rich water capacity, and to provide a method for producing the konjac powder.SOLUTION: This method for producing the konjac powder includes, in a water retaining process 1, obtaining a product by adding water (a water adding step 4) to a refined powder which is refined from konjac yam followed by making the product retain water (a water retaining step 5), and in a freeze-drying process 2, vacuum freeze-drying the product (a freezing process 6, a decompression step 7 to put into a vacuum condition, and a drying step 8), and in a milling process 3, again pulverizing the product (a milling step 9).COPYRIGHT: (C)2010,JPO&INPIT【課題】豊富な保水量をもつという優れた保水性を維持したまま、吸水速度を速めたこんにゃく粉及びその製造方法を提供する。【解決手段】こんにゃく芋から精製された精粉に対して、保水工程1において水を加え(加水段階4)保水させた(保水段階5)ものを、フリーズドライ工程2において真空凍結乾燥した(凍結段階6、真空状態下におくための減圧段階7及び乾燥段階8)後に、砕粉工程3において再び粉状にする(砕粉段階9)。【選択図】図1
