The present invention provides a method for manufacturing excellent denatured whey protein that does not have an undesirable effect on the properties of the product. A method for manufacturing denatured whey protein characterized in processing a whey protein solution by continuously repeating the following steps (1) and (2) at least two times. (1) A step for pressurizing at at least 50 MPa and heating at 85-100°C, and a step for, after the heating and pressurizing of step (1), reducing pressure to 0.05-0.5 MPa, and maintaining the temperature within a range of ±10°C of the heating temperature of step (1).
