PURPOSE: The present invention is about to a process for flavor oil by reacting sugar and amino acid with other materials in high temperature. CONSTITUTION: A process for flavor oil consisted of adding sugar, amino acid, spice, natural extracts, seasoning, vitamin E with 10-30 weight%, and cooling in 70-90°C by heat agitating in an agitator having a reflux cooling apparatus at 80-120°C for 30-90 minutes, filtering, precipitate and absorption specific perfume to edible oil and fat by removing moisture by high-speed centrifuge(1500rpm).
