The present invention relates to a manufacturing method of a soybean paste using medical herbs and a tree sap-bamboo salt mixture, and fermented soy products manufactured by the manufacturing method. The present invention has low salinity and a light salty taste, but a strong sweet taste when relatively compared to the fermented soy products manufactured by an original method thereby having excellent taste.
