PROBLEM TO BE SOLVED: To provide a method for producing honey using a honey source inexpensively available in large quantities, and novel honey produced by the method.SOLUTION: A method for producing honey includes the steps of: gelatinizing a starch-containing food raw material and treating the resultant material with an amylolytic enzyme to obtain a saccharified solution adjusting the obtained saccharified solution to obtain the sugar content of 20% or more and a relative viscosity of 4.5 or less to water at a temperature of more than 25°C and not more than 40°C supplying honeybees with the adjusted saccharified solution kept at a temperature of more than 25°C and not more than 40°C, to produce honey and collecting the produced honey.
