PROBLEM TO BE SOLVED: To provide a lipase preparation having a high transesterification activity compared to a conventional immobilized lipase and highly retaining the transesterification activity for a long period of time, and to provide a method for producing such a lipase preparation.SOLUTION: The lipase preparation contains lipoprotein. The lipase preparation preferably further contains fats and oils. The lipase preparation is preferably produced by eliminating water after adding and mixing the lipase into an oil-in-water type emulsion containing the lipoprotein.
