PROBLEM TO BE SOLVED: To provide a technology for inhibiting the generation of a deteriorated smell, capable of inhibiting the production of the deteriorated smell-causing substance of a flavor originating from citrus plants, produced by the heating or the progress of time of products containing the flavor substance originating from the citrus plants in each of stages such as production, delivery, preservation, while having a high safety and not affecting the original flavor or aroma of final products.

The method for inhibiting the deterioration of the flavor originating from the citrus plants is characterized by adding or using the white oak extract. The product containing the flavor substance originating from the citrus plants characterized by blending this flavor deterioration inhibiting agent is also provided.
