PROBLEM TO BE SOLVED: To provide a fermenting and aging technique with improved efficiency and quality for producing a high-value-added fermented food such as black garlic.SOLUTION: A powder charcoal, such as Bincho charcoal, is attached beforehand to the surface of a vegetable such as garlic, and it is put in an environment at a temperature of 63°C-75°C and a humidity of 95% or more.
