PROBLEM TO BE SOLVED: To provide a gelatinous sesame food making method and making kit in which, while a separate addition of calcium or gelling agent and heating are not required, not only milk but also soy milk can be used.SOLUTION: The gelatinous sesame food is prepared by mixing a ground sesame into a low-methoxyl pectin aqueous solution and stirring to gelate such that, in said gelatinous sesame food after mixing, the weight of calcium when the weight of water contained in the gelatinous sesame food is taken as 100 is 0.3 or more and the product of the weight of low-methoxyl pectin and the weight of calcium when the weight of water contained in the gelatinous sesame food is taken as 100 is in the range of 0.6 to 0.9.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】別途のカルシウムやゲル化剤の添加や加熱が不要でありながら、牛乳のみならず豆乳も利用可能なゲル状ごま食品の作成方法及び作成キットを提供すること。【解決手段】低メトキシルペクチン水溶液にねりごまを混合し攪拌することによりゲル化させ、混合後のゲル状ごま食品において、該ゲル状ごま食品に含まれる水の重量を100としたときのカルシウムの重量は0.3以上となり、かつ、該ゲル状ごま食品に含まれる水の重量を100としたときの低メトキシルペクチンの重量とカルシウムの重量との積が0.6~0.9の範囲になるように調製する。【選択図】なし
