PROBLEM TO BE SOLVED: To provide a method for producing buckwheat seeds for increasing a GABA content further higher than that of brown rice and having good flavor and a high GABA content.
SOLUTION: The method for producing buckwheat seeds comprises aging and preserving buckwheat seeds incorporated with water in an amount to be totally absorbed while keeping at 2-4°C in a noncontact state with flowing water in an anaerobic atmosphere, increasing a &gamma-aminobutyric acid (GABA) content in the buckwheat seeds and drying the buckwheat seeds not to reduce the &gamma-aminobutyric acid content.
