PROBLEM TO BE SOLVED: To provide a method for producing a ginger processed product in which the content of shogaol is increased while reducing the content of gingerol, and a ginger processed product.SOLUTION: Provided is a method for producing a ginger processed product containing a heating process where a ginger and an aqueous solution of volatile acid are separately arranged, and the ginger is subjected to heating treatment in an atmosphere of vapor produced by heating the aqueous solution of volatile acid. It is preferable that the aqueous solution of volatile acid being an aqueous solution of acetic acid.
