PROBLEM TO BE SOLVED: To provide an ester-exchanged oil for chocolate that has a reduced content of trans fatty acid and, at the same time, has excellent compatibility with cocoa butter and excellent blooming resistance, and good melting properties.SOLUTION: The present invention provides an ester-exchanged oil in which the content of unsaturated fatty acid in the constituent fatty acid composition is controlled to be 10 mass% or less, and the contents of other fatty acid composition and triglyceride in the constituent fatty acid composition are controlled as follows: (A) a C6-18 saturated fatty acid content is 90-99.5 mass% (B) a C6-10 saturated fatty acid content is 6-18 mass% (C) lauric acid content is 20-50 mass% (D) palmitic acid content is 20-38 mass% (E) stearic acid content is 3-20 mass% (G) trans fatty acid content is 5 mass% or less the total of (B) saturated fatty acid and unsaturated fatty acid is 10-20 mass% the content of triglyceride having a total of 30 to 38 carbon atoms is 20-50 mass% and the content of triglyceride having a total of 48 or more is 30 mass% or less.SELECTED DRAWING: NoneCOPYRIGHT: (C)2019,JPO&INPIT【課題】トランス脂肪酸含有量を低減しながら、ココアバターとの相溶性と耐ブルーム性に優れ、口溶けの良好なチョコレート用のエステル交換油脂の提供。【解決手段】構成脂肪酸組成中の不飽和脂肪酸含有量を10質量%以下とし、構成脂肪酸組成中の他の脂肪酸組成及びトリグリセリドを以下のような含有量に調整したエステル交換油脂。(A)炭素数6~18の飽和脂肪酸の含有量が90~99.5質量%、(B)炭素数6~10の飽和脂肪酸の含有量が6~18質量%、(C)ラウリン酸の含有量が20~50質量%、(D)パルミチン酸の含有量が20~38質量%、(E)ステアリン酸の含有量が3~20質量%、(G)トランス脂肪酸含有量が5質量%以下、(B)の飽和脂肪酸と不飽和脂肪酸の合計が10~20質量%、総炭素数が30~38のトリグリセリド含有量が20~50質量%、及び総炭素数が48以上のトリグリセリド含有量が30質量%以下。【選択図】なし
