The present invention relates to a method for manufacturing dried figs and, more specifically, to a method for manufacturing dried figs which can maintain a favorable texture and an original fruit color by drying cut fig slices in a hot-air drying manner. The present invention comprises: a selecting step for selecting, among matured figs, figs with a closed end； a washing step for washing the figs, which have been selected in the selecting step, with water； a cutting step for cutting the figs, which have been washed in the washing step, in a direction vertical to a length direction such that the skin forms the edge, thereby obtaining circular slices with a thickness of 0.5-1.5 cm； and a drying step for putting the slices into a dryer and then drying the slices by applying hot air thereto, wherein the drying step is composed of: a dehumidifying drying step for applying hot air of 50-55°；C while a damper of the dryer is opened, thereby emitting moisture generated from the slices to the outside； and a sealing drying step for applying hot air of 58-63°；C while a damper is closed, after the humidifying drying step, thereby reducing the moisture content in the slices to 10-25 wt%.본 발명은 건 무화과 제조방법에 관한 것으로서, 더욱 상세하게는 절단한 무화과 슬라이스를 열풍건조방식으로 건조시켜 양호한 식감과 과일 본래의 색상을 유지할 수 있는 건 무화과 제조방법에 관한 것이다. 본 발명은 완숙된 무화과 중 끝이 벌어지지 않은 무화과를 선별하는 선별단계와, 선별단계에서 선별된 무화과를 물로 세척하는 세척단계와, 껍질이 테두리를 형성하도록 상기 세척단계에서 세척된 무화과를 길이방향과 수직인 방향으로 절단하여 0.5 내지 1.5cm의 두께의 원형 슬라이스를 수득하는 절단단계와, 슬라이스를 건조기에 투입한 후 열풍을 가해 건조시키는 건조단계를 포함하고, 상기 건조단계는 상기 건조기의 댐퍼를 열어 둔 상태에서 50 내지 55℃의 열풍을 가해 상기 슬라이스로부터 발생된 수분을 외부로 방출시키는 배습건조단계와, 상기 배습건조단계 후 상기 댐퍼를 닫아 둔 상태에서 58 내지 63℃의 열풍을 가해 상기 슬라이스의 수분 함량을 10 내지 25중량%까지 감소시키는 밀폐건조단계로 이루어진다.
