For the continuous adjustment of the fat content of cream, by comparatively simple means and in extraordinarily exact manner, according to the invention it is proposed in the process according to the broad term of the patent claim to continuously measure the amount of raw milk per unit of time and also the fat content of the raw milk and the amount per unit of time of cream leaving the separator and to control the measured values in a process computer, which determines, according to the input measured values, the amount of cream removed per unit of time.
