PROBLEM TO BE SOLVED: To provide an organic Chinese noodle passing smoothly one's throat, yet having firmness.SOLUTION: The organic Chinese noodle is made from noodle and soap. The noodle is made only from organic hard flour, organic corn starch, organic gluten, salt, lye water, and water. When cooking soap stock using a variety kind of meat, the material is stewed for 30 to 70 min while kept at 70 degree Celsius or less. Sea food is wiped on the surface well, innards are removed, immersed in water for one night, the material is cooked and when boiled, heat is turned off and cooked down for 3 min, and when cooled, the soap stock is packed in a bottle and stored in a refrigerator.
