YOGURT WHICH IS EASY TO DIGEST AND ELIMINATED IN ODOR OF MEDICINAL HERBS AND HAS GOOD TASTE PREPARED BY INOCULATING LACTIC ACID BACTERIA INTO CULTURE MEDIUM COMPRISING SKIM MILK AND HERBAL EXTRACT AND THEN FERMENTING
PURPOSE: A yogurt product prepared by inoculating lactic acid bacteria into a culture medium comprising skim milk and an herbal extract and then fermenting is provided. The herbal extract is obtained by extracting medicinal herbs derived from a traditional herbal formula such as yukmijihwangtang, sogeunjungtang and socheongyongtang in water. The product is easy to digest and eliminated in odor of medicinal herbs and has good taste. CONSTITUTION: Medicinal herbs are extracted in water, added with 3 to 25%(w/v) of skim milk, inoculated with lactic acid bacteria such as Bifidobacterium longum(KCTC8649P) and then fermented. The medicinal herbs comprise 16 parts by weight of Radix Rehmanniae Preparata, 8 parts by weight of Rhizoma Dioscoreae, 6 parts by weight of Moutan Cortex Radicis, 6 parts by weight of Rhizoma Alismatis, 6 parts by weight of Hoelen and 8 parts by weight of Cornu Cervi Parvum, which are derived from yukmijihwantan as a traditional herbal formula.
