A process for automatically controlling the heating/cooking of a food item in a cooking oven having a door, heaters and an oven temperature acquisition system, comprises the steps of measuring the total electrical power (P in ) absorbed by the oven, measuring the oven temperature, and assessing the actual power (P load ) transferred to the food item by automatically compensating disturbance factors, that compensate e.g. for different cookware, for heat losses due to opening the door, or different heater power due to different structural tolerances. Also, the initial oven temperature, the ambient temperature and drift or decay of the temperature sensor may be compensated.
