The invention relates to a crispy artichoke snack and to a production method, consisting of a solid snack based on laminated artichokes cooked to be crispy and which is obtained from different parts of fresh and frozen artichokes, the production thereof comprising, at least, cutting the hearts and/or bottoms into sheets of between 0.5 and 4 mm, and heat-treating by frying and/or baking in a vacuum and/or under pressure, optionally in the presence vegetable oil, and optionally considering an osmotic dehydration bath, a bath of enzymes and technological adjuvants, and a bath of acids or alkalis for bleaching.
