The sterilization device for unheated food can sterilize the unheated food and food which is incapable of heating by having specific properties including fresh food.본 발명은 비가열 식품 살균장치에 관한 것으로 식품 표면의 수분을 조절하는 수분조절실, 수분이 조절된 식품의 표면을 대기압 플라즈마로 처리하여 살균하는 대기압 플라즈마 살균실 및 식품이 수분조절실과 대기압 플라즈마 살균실로 이동되도록 식품을 운반하는 컨베이어를 포함함으로써, 비가열로 식품을 살균할 수 있으므로 신선 식품 등 식품의 특성상 열처리가 불가한 식품을 살균할 수 있다.
