The present invention relates to: fermentation conditions for increasing S-allyl cysteine content of garlic; a technology for manufacturing a feed additive composition using the same; and a use thereof. The composition for increasing the S-allyl cysteine content of garlic includes one or more strains from Leuconostoc mesenteroides KCCM 11324 and KCCM35046 as active ingredients. The present invention provides a method for increasing the S-allyl cysteine content of garlic, including a step of fermenting garlic by using one or more strains from Leuconostoc mesenteroides KCCM 11324 and KCCM35046 as starter strains.본 발명은 마늘의 에스-알릴 시스테인 함량을 향상시킬 수 있는 발효조건 및 이를 이용한 사료첨가용 조성물의 제조 기술 및 그 용도에 관한 것이다.
