An apparatus 1 for processing foodstuff comprises a conveyor 2 on which one or more sealed packages of fluid foodstuff are conveyable, a microwave zone 3 though which one or more of the sealed packages are conveyed exposing them to microwaves, and a means for inducing turbulence within the packages before, during or after being conveyed through the microwave zone. The conveyor may be an endless belt conveyor and the microwave may be a microwave tunnel comprising plural magnetrons. The turbulence means may comprise an abutment means (21a, 21b, figure 5) arranged to impact a force on the package, for example by contact. Also disclosed is a method of pasteurising fluid foodstuff contained in sealed packages using the apparatus to mix the contents. The method is intended to effectively pasteurise the foodstuff without losing flavour.
