PROBLEM TO BE SOLVED: To provide an antifungal substance which is safe and has an antifungal activity in neutrality, a fungus producing the antifungal substance, and a growth inhibiting method of fungi and/or yeasts using them.SOLUTION: This antifungal substance is produced from a yeast selected from a group consisting of the genera Candida, Saccharomyces, Pichia, Rhodotorula, Clavispora and Torulaspora and inhibits the germination of a spore, and it has following characteristics (1) it has antifungal activity at pH 7.0, (2) a culture solution of which the yeast is cultivated in a 10% (w/w) skimmed milk culture medium has antifungal activity, (3) it is kept on the surface of an ultrafilter membrane when the supernatant liquid of the culture solution of which the yeast is cultivated in a 10% (w/w) skimmed milk culture medium and ultrafiltered using an ultrafilter membrane having an MWCO (Molecular Weight Cut Off) of 10 kD.COPYRIGHT: (C)2009,JPO&INPIT【課題】安全であり、かつ、中性において抗真菌活性を有する抗真菌性物質、該抗真菌性物質を産生する菌、並びに、これらを用いるカビ及び/又は酵母の増殖阻害方法の提供。【解決手段】キャンディダ属菌、サッカロマイセス属菌、ピキア属菌、ロドトルラ属菌、クラビスポラ属菌、及びトルラスポラ属菌からなる群より選ばれる1の酵母が産生する、胞子の発芽を阻害する抗真菌性物質、及び、下記の特徴を有する抗真菌性物質;1)pH7.0において、抗真菌活性を有すること、2)10%(w/w)スキムミルク培地で前記酵母を培養した培養液が、抗真菌活性を有すること、3)10%(w/w)スキムミルク培地で前記酵母を培養した培養液の上清を、MWCO(Molecular Weight Cut Off、分画分子量)が10kDである限外濾過膜を用いて限外濾過した場合に、限外濾過膜表面に保持されること。【選択図】なし
