The present invention relates to a manufacturing method of beverages using Siberian chrysanthemum and fermented lacquer having improved antioxidation, skin whitening, and antiaging activation； beverages manufactured thereby； and a health functional food composition for antioxidation, skin whitening, and antiaging containing the beverage as active ingredients. The method comprises: a step (1) of adding ethanol to Siberian chrysanthemum to extract, and filtering the same to manufacture Siberian chrysanthemum extract； a step (2) of adding fomitella fraxinea bacteria culture medium to sterilized and pulverized peels of lacquer trees, fermenting and drying the same and pulverizing the dried peels of lacquer trees to manufacture a fermented lacquer； a step (3) of adding water to the fermented lacquer generated in the step (2), extracting and filtering the same to manufacture a fermented lacquer extract； and a step (4) of mixing the Siberian chrysanthemum extract manufactured in the step (1), the fermented lacquer extract manufactured in the step (3), apple concentrates, fructooligosaccharide, high fructose corn syrup, vitamin-C and polydextrose.본 발명은 (1) 구절초에 에탄올을 첨가하여 추출한 후 여과하여 구절초 추출물을 제조하는 단계； (2) 멸균시킨 후 분쇄한 옻나무 껍질에 장수버섯균 배양액을 첨가한 후 발효하고 건조한 후 분쇄하여 발효옻을 제조하는 단계； (3) 상기 (2)단계의 제조한 발효옻에 물을 첨가하여 추출한 후 여과하여 발효옻 추출물을 제조하는 단계； 및 (4) 상기 (1)단계의 제조한 구절초 추출물 및 상기 (3)단계의 제조한 발효옻 추출물과 사과 농축액, 프락토올리고당, 액상과당, 비타민 C 및 폴리덱스트로스를 혼합하는 단계를 포함하여 제조하는 것을 특징으로 하는 항산화, 피부 미백 및 항노화 활성이 증진된 구절초 및 발효옻을 이용한 음료의 제조방법 및 상기 방법으로 제조된 음료와 상기 음료를 유효성분으로 함유하는 항산화, 피부 미백 및 항노화용 건강기능식품 조성물에 관한 것이다.
