PROBLEM TO BE SOLVED: To provide a novel method for producing foamable oil-in-water type emulsion having excellent characteristics such as improvement of emulsion stability, shortening of a whipping time and reduction of return.SOLUTION: A production method of foamable oil-in-water type emulsion including two or more homogenization steps, includes the first homogenization step for adjusting a median diameter of a fat globule to 1.0-6.0 μm by a cavitator or a rotor-stator type device, and the second homogenization step for reducing furthermore the median diameter of the fat globule.
