PROBLEM TO BE SOLVED: To provide covered fine particles of oil having less than 5 &mum of average diameter obtained by utilizing an emulsifier suitable for the target application and then tightly coating the oil-in-water type emulsified particles of the oil with fine particles of a slightly water-soluble calcium salt with less than 1 &mum of average diameter, and to provide an emulsion using the covered oil particles.SOLUTION: The covered oil particles with less than 5 &mum of average diameter are obtained by adhering the slightly water-soluble calcium salt fine particles which is obtained by atomizing the slightly water-soluble calcium salt into fine particles with less than 1 &mum of average diameter, onto the surface of the oil-in-water type emulsion particles obtained by emulsifying the oil by using a nonionic surfactant which has a high calcium particle dispersing property.COPYRIGHT: (C)2007,JPO&INPIT【課題】目的とする用途に適切な乳化剤を用いることで、油粒子の微細化を図り、更に油分の水中油型乳化粒子を水難溶性無機カルシウム塩の平均粒径1μm以下の微粒子により強固に被覆した平均粒径5μm以下の微細な被覆油粒子および該被覆油粒子を用いた乳化物を提供する。【解決手段】水難溶性無機カルシウム塩を平均粒径1μm以下に微粒化して得られた水難溶性無機カルシウム塩の微粒子を、カルシウム粒子分散能の高いノニオン性界面活性剤を用いて油分を乳化した水中油型乳化粒子の表面に付着させることにより平均粒径が5μm以下の被覆油粒子を得る。【選択図】 図1
