PROBLEM TO BE SOLVED: To provide konjak with a good appearance which does not lose shape during cooking and can be easily eaten by an aged person or an infant with weak masticating ability while leaving flavor and texture of konjak and a method for manufacturing the konjak.SOLUTION: Konjak provided in the present invention includes granular konjak the maximum grain size of which is 0.3-0.9 mm and combination konjak for combining the granular konjak. The combination konjak includes konjak powder and starch. The hardness of the konjak is 15000-40000 N/m2. A manufacturing method of the konjak comprises the steps of obtaining granular konjak by powdering basic konjak so that the maximum grain size is 0.3-0.9 mm (S1-S8), obtaining mixed konjak paste by mixing konjak paste including at least water, 0.5-5 mass% of konjak powder, 1-5 mass% of starch, and 1-2 mass% of trehalose with the granular konjak (S9-S12), and coagulating the mixed konjak paste by coagulant (S13-S15).SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT
