The invention relates to a method for the production of highly stable aqueous dispersions of phytosterols, phytostanols and derivatives thereof, which allows the use of a wide range of emulsifiers in relatively small concentrations in relation to the phytosterols and which allows the preparation of dispersions with high concentrations of phytosterols. Said dispersions are obtained using a method in which one or more phytosterols, an aqueous medium and one or more emulsifiers are dispersed in a disperser at a temperature of at least 140 °C in order to obtain an emulsion and the resulting emulsion is subsequently cooled in order to obtain a dispersion of sterols in an aqueous medium.본 발명은 피토스테롤, 피토스타놀 및 이들의 유도체의 고도로 안정한 수성 분산물을 제조하는 방법에 관한 것이고, 이는 피토스테롤과 관련하여 비교적 농도가 낮은 유화제를 넓은 범위에서 이용할 수 있게 하고 농도가 높은 피토스테롤을 지닌 분산물을 제조할 수 있게 한다. 상기 분산물은 하나 또는 그 이상의 피토스테롤, 수성 매질 및 하나 또는 그 이상의 유화제가 분산기에서 적어도 140℃의 온도에서 분산하여 유탁액을 얻도록 하고, 이어서 결과로 생성된 유탁액을 냉각하여 수성 매질 중의 스테롤의 분산물을 얻도록 하는 방법을 이용하여 얻어진다.
