PURPOSE: A method for manufacturing sliced peanuts excellent in acidification restraint is provided to prevent water from permeating into the flesh of peanuts and to keep the food quality for a long term. CONSTITUTION: The skin of peanuts is removed and sorted. The sorted peanuts are fried in cooking oil of 140-180deg.C for 1-3minutes to remove inner skin. The peanuts are deposited in warm water of 40-80deg.C for 10-40minutes and primarily dried to have 12-20% of moisture content by using a natural drying method or hot-air drying method. The dried peanuts are sliced into 0.5-2.0mm by using a molding cutter. The sliced peanuts are secondarily dried to have a moisture content of 4-8% by using a hot-air dryer. The secondarily dried peanuts are fried in cooking oil of 140-180deg.C for 1-3minutes, or roasted in a rotary or a plate-typed roaster. The treated peanuts are cooled to 18-20deg.C.
