PROBLEM TO BE SOLVED: To provide a method for manufacturing root vegetables packed in a container, capable of preventing discoloration to blue during preserving root vegetables such as Japanese radish together with a seasoning liquid, and to provide a method for preventing discoloration of the root vegetables packed in the container.SOLUTION: A method for manufacturing root vegetables packed in a container includes storing root vegetables and a seasoning liquid in the container. In more details, the method for manufacturing the root vegetables packed in the container includes: a step of bringing root vegetables into contact with an amino acid solution which contains at least one kind of amino acids selected from the group consisting of prescribed amino acids of the first group and amino acids of the third group, and substantially contains no prescribed amino acids of the second group and a step of storing the root vegetables in the container together with a seasoning liquid which contains at least one kind of amino acids selected from the group consisting of amino acids of the second group.
