The present invention relates to an oyster croquette, and a production method thereof. More specifically, the present invention relates to an oyster croquette. By producing the oyster croquette which includes oyster cooked with steam of pine needles, flavors of oyster is intensively concentrated while fish tastes of oyster is reduced, thereby allowing user to easily eat active ingredients of oyster. Since the flavors and aroma of pine needles are added, the finally produced oyster croquette shows enriched flavors and aroma.
