PROBLEM TO BE SOLVED: To provide the solution of highly dissolvable calcium hydroxide, having a good solubility with water, easily dissolvable with water even at a low temperature, and also capable of being utilized for the calcium fortification and improvement of quality keeping of a food and the improvement of physical properties of edible meat, and powder thereof.SOLUTION: This solution of the highly dissolvable calcium hydroxide is obtained by adding calcined calcium as a raw material into sugar liquid having at least 5-50 wt.% concentration and kept at a temperature of 40 to 80°C up to the limit of saturated state, and the powder of the same is also provided. As the sugar solution, mixed sugars may be preferably used. It is preferable to make the solution of the highly dissolvable calcium hydroxide comprising 100 pts. sugar liquid and 2 to 15 pts. calcium oxide, and the powder thereof, and it is preferable that by drying the sugar liquid to which the raw material calcined calcium is added, up to the limit of its saturated state, the components of the obtained powder are made as the ranges of 3.0 to 10.0% water content and 5.0 to 30.0% Ca.COPYRIGHT: (C)2012,JPO&INPIT【課題】本発明は水に対して溶解性が良好で、低温でも水に溶け易くなると共に食品のカルシウム強化と日持ち向上用及び食肉の物性改良用として利用できる高溶解性の水酸化カルシウム溶液及びその粉末を提供することを目的とする。【解決手段】少なくとも、濃度が5~50%重量で且つ40~80℃に保温された糖液中に、原料の焼成カルシウムが飽和状態を限度で加えられて得られた高溶解性の水酸化カルシウム溶液及びその粉末である。この糖液として、混合した糖類を用いると良い。また糖液100部と、酸化カルシウム2~15部とから成す高溶解性の水酸化カルシウム溶液及びその粉末とするのが好ましく、前記原料の焼成カルシウムが飽和状態を限度で加えられた糖液を乾燥させて、得られた粉末の成分を、水分3. 0~10. 0%、Ca5.0~30.0%の範囲と成すものとするのが好ましい。【選択図】図1
